A field blend of Trebbiano, Malvasia, and Verdicchio. Orange peel, pear, anise, ginger, and a contemplative earthiness. Aged for 2 or more weeks on the skins this is a more concentrated and palate coating version of the regular Coenobium and will hold up to heartier fare. Organic.
