Courtin, Marie 2016 Champagne Blanc de Blancs Extra Brut “Éloquence”

100% Chardonnay. Lemony apple fruit notes, with toast and vanilla. Fermented and aged in older barriques, this Champagne is seemingly Burgundian in character. Mineral with a finely etched texture. Dominique’s wines have become much sought after with a FOMO like fervor. Very limited. Organic.
