100% Chenin Blanc. Monopole in Bizay, in the village of Épieds, planted in 2003, silty-sand topsoil over a relatively soft, chalky limestone bedrock. Grapes are pressed with whole clusters, ambient yeast fermentation, blocked malolactic fermentation, and aged for 9-12 months in used barrels, filtered. Very limited. Certified in 2007, but converted to organic organic in 2000.
