Dehu, Benoit NV Champagne Initiation Brut Nature (Lot v16)

78% Pinot Noir and 22% Pinot Meunier. Red Delicious apple, orange zest, pecan, with a faint note of wild strawberry, some exotic spice and breakfast muffins, or biscuit. This no dosage Champagne is decidedly dry and scintillating. A perfect match for fowl, hardier seafood dishes, cheeses, and charcuterie, it also sings quite nicely by itself. Fermented and aged in neutral oak, the wine does not go through malolactic fermentation, keeping its chiseled structure in the forefront. Dry and fabulous. Organic.
