Guiberteau 2017 Saumur Blanc “Clos des Carmes”

100% Chenin Blanc. Clos des Carmes is a Monopole on the hill of Brézé that was purchased by Romain’s grandfather in 1955. Only the highest quality of grapes are put into this bottling. The grapes are whole-cluster pressed and the fermentation initiates with ambient yeasts. There is no malolactic fermentation. The wine is then aged on the lees in new and used barrels. The wine is filtered and allowed to age in bottle for a minimum of 6 months. Very limited. Certified in 2007, but converted to organic in 2000.
